<p class="wp-block-paragraph">These gems of Southern Italy are unique and wonderful places that I adore. They are destinations I hold near and dear in my heart and my memories. I never tire of the magic they work on me as if experiencing them for the very first time. I urge you to discover them on your next trip to Southern Italy.</p>
<h4>1. Vietri Sul Mare</h4>

<p>Campania Region, Amalfi Coast</p>
<p><em>(3 hours’ drive south of Rome or 1 hour drive south of Naples)</em></p>
<p>Incredibly, there’s still a very special town on the Amalfi Coast that remains somewhat unknown. That’s especially surprising once you’ve seen colorful, whimsical, one-of-a-kind Vietri sul Mare. Every time I visit, I imagine this must be how the Amalfi Coast felt before tourism overtook this region.</p>
<p>Aside from its cheerful, authentic charm what I love best about Vietri, is its ubiquitous creativity. A flourishing center for the ceramics industry since the 15th century, its ceramics are now a regional attraction. Everywhere you look are tile mosaics, hand-painted ceramic plaques, public sculptures, and an endless variety of functional and art pottery.</p>
<p>Coming from the direction of <em>Salerno</em>, <em>Vietri</em> is the first stop on the spectacular Amalfi Coast. The town’s main street, <em>Corso Umberto</em>, is a welcoming jumble of artisan shops, cafes, and small restaurants, with a small intimate plaza at each end for savoring postcard-like views of the Mediterranean. If you’re a ceramics fan, or know someone who is, don’t miss the delightful Museum of Ceramics at <em>Villa Guariglia</em>. And do explore Vietri’s winding, picturesque alleys and Neapolitan Baroque tile-roofed <em>Duomo</em>.</p>
<h4>2: Ischia</h4>

<p><em>Campania Region (1 hour by ferry from Naples)</em></p>
<p>Beautiful, serene <em>Ischia</em> is the largest island in the Gulf of Naples. Just an hour-long boat ride from the mainland, generations of Neapolitan families have traditionally spent their summer holidays here. Relaxed and low-key, Ischia feels distinctly different from its glitzy sister island, <em>Capri</em>. Right away you’ll notice far less tourists and many more locals.</p>
<p>Unlike Capri, Ischia is not a quick day trip. But it is an ideal place to rest and recharge for a few days amidst tiny, photogenic towns, gorgeous beaches with clear blue water and, a wealth of thermal springs. Just as the ancient Romans did, Italians and Europeans still flock to Ischia for wellness treatments. A (dormant!) volcanic island, it’s renowned for its profusion of thermal pools, parks, spas, and wellness centers.</p>
<p>If you enjoy botanical gardens, be sure to venture inland to see the lush and exotic terraced gardens of <em>La Mortella</em>. One of the most extraordinary gardens in all of Europe, it was fifty years in the making. Today, it’s a spectacular panorama of orchids, ferns, palms, water lilies and fountains. In summer the outdoor amphitheater offers musical concerts. Back when it was a private home, La Mortella hosted international celebrities like Laurence Olivier, Vivien Leigh and Maria Callas.</p>
<h4>3: Matera</h4>

<p><em>Basilicata Region</em></p>
<p><em>(1 hour drive from Bari and 3 hours’ drive from Naples)</em></p>
<p>My memory of the first time I saw <em>Matera</em> will always remain vivid. It was early September when I arrived in this remote corner of Southern Italy at twilight. From the viewing deck of the Belvedere, nothing could have prepared me for the incomparable sight of Matera’s famous <em>I Sassi</em>. It was a truly spiritual moment.</p>
<p>The <em>sassi</em> (or “stones”) encompass more than 1,500 ancient cave dwellings carved out of local limestone, heaped atop one another in an astoundingly dramatic fashion along the sides of a steep ravine. Matera is one of the oldest continuously inhabited places in the world, with people living here for over 9,000 years. That’s old!</p>
<p>The truly remarkable story of the <em>sassi</em> begins in Paleolithic times. At first, they were natural caves and grottoes. Over many millenia, they evolved into permanent but rugged homes where, as late as the 1950s, occupants still lived here in extremely rough conditions, minus electricity or running water. At this time, the Italian government moved the occupants into public housing in a modern part of the city.</p>
<p>But soon enough, by 1986, people began to return<em>,</em> transforming the legendary caves into homes, shops, hotels and restaurants. In 1993 the <em>Sassi di Matera</em> were named a UNESCO World Heritage site, as “the most outstanding, intact example of a troglodyte settlement in the Mediterranean region, perfectly adapted to its terrain and ecosystem.”</p>
<p>Matera and I Sassi were prominently featured in Mel Gibsons’s 2004 film <em>The Passion of the Christ</em> and, in 2017 scenes from <em>Wonder Woman </em>were shot here as well.</p>
<h4>4: Lecce</h4>

<p><em>Puglia Region</em></p>
<p><em>(45 minutes’ drive from Brindisi airport, 5 ½ hours by train from Rome)</em></p>
<p>Tucked away in the “heel of the boot”, on Italy’s southeastern edge, is the splendid town of <em>Lecce</em>. Nicknamed the “Florence of the South” or the “Baroque pearl of Italy” for its exquisite architecture, this southern Italian jewel is not to be missed. Lecce’s architecture is constructed of local limestone in warm sandy colors with voluptuous Baroque flourishes. This is a town to wander and lose yourself in. Stroll through its spider web streets with their ornate doorways and balconies, its piazzas anchored by elegant <em>palazzi</em> and glorious Baroque churches. I promise you amazing sights around every corner and at every turn.</p>
<p>One absolute must-see is the <em>Basilica of Santa Croce</em>. The lavish facade with its intricately carved decorations is pure Lecce Baroque splendor, guaranteed to take your breath away!</p>
<p>Lecce is also renowned for the art of papier-mâché craftsmanship (<em>cartapesta</em> in Italian). Using a mixture of paper and glue, artisans fashion figurines, puppets and sculptures, which when dried, are painted and decorated. This art-form is often used to create Nativity figures such as the Madonna, St. Joseph, Jesus, and the Three Kings. In the heart of the city’s old town, you’ll find many small workshops displaying <em>cartapesta </em>creations. Many of these also offer classes in the technique.</p>
<p>As always throughout Puglia, you’re never far from the ocean. Lecce is so close to the Adriatic Sea (10 kilometers) that it’s been said in ancient times the belltower of its Duomo doubled as a lighthouse! If you climb it, you’ll be rewarded with phenomenal views of the Adriatic. On a clear day, you can even see the mountains of Albania.</p>
<h4>5: Salina</h4>

<p><em>Aeolian Islands, Sicily</em></p>
<p><em>(2 hours by ferry from the Port of Milazzo, 5 hours’ drive/ferry from Catania airport)</em></p>
<p><em>Salina</em> is one of a cluster of seven volcanic islands, the Aeolian Islands, located off Sicily’s northeastern coast. This wonderful place is my first choice when I really want to escape it all! Its poetic charms, raw beauty, volcanic cliffs plunging into the sea, and relaxed, friendly atmosphere always call me back.</p>
<p>A network of freshwater springs also means the island is blanketed with green hills covered with wild capers (a fundamental ingredient in the local cuisine), olive groves and little vineyards producing the famous local <em>Malvasia</em> wine.</p>
<p>Picture what a lush Mediterranean paradise dotted with sleepy villages, warm pebbly beaches and local fishing boats might do for <em>your</em> soul! And one final surprise… Salina boasts two (almost hidden!) Michelin star restaurants.</p>
<p>The very best way to enjoy Salina and the Aeolian Islands is by water. Boat tours are readily available, and I recommend not merely touring Salina but excursions to the islands of <em>Panarea</em> and <em>Stromboli</em> as well.</p>

<p id=""><strong id="">A few pro tips on Amazing Amalfi</strong></p>
<p id="">If you haven’t visited the Amalfi Coast, it’s time! Few places lift the spirits and tame the stresses of daily life like the soaring cliffs, panoramic vistas, and unique rhythm of life in this proudly authentic region. To spend a day (or several!) driving along the vividly blue Mediterranean coastline or weaving ever upwards through tiny hillside towns, past lemon groves, vineyards, villas, and cobbled paths to more and more expansive coastal views is one of the most restorative experiences I know.</p>
<p id="">In my opinion, it’s essential to spend at least 4 nights along the Amalfi coast to fully appreciate it. I usually suggest Sorrento, the first town on the way from Rome, as a home base. Between its proximity to Capri and Pompeii and its location along one of Italy’s most gorgeous coastlines, it’s an ideal place to soak up the sun, the ambiance, and some exquisitely fresh seafood between excursions.</p>

<p id="">From Sorrento, you can easily catch a “Trenino” or commuter train, to the parking lot of Pompeii in less than an hour. You’ll also be ideally positioned to hop a ferry to the legendarily scenic island of Capri. If time permits, I’d suggest at least a two night’s stay and maybe three. After the last ferry has left for the mainland, it’s easier to fully savor the beauty and mystique of this craggy  island once inhabited by the Greeks and then the Roman emperors.</p>

<p id="">Staying in Capri offers two fabulous choices. On arrival, take the funicular or an open-air taxi to explore the buzzy restaurants, boutiques, and cafes surrounding “La Piazzetta,” (the town square) situated seven minutes from the ferry dock. Or, travel by public bus or taxi to the more laid back atmosphere of Anacapri, with its range of luxurious 5-star hotels and smaller hotels. When in Anacapri, don’t miss the <em id="">Villa San Michele</em>, a meticulously maintained property of the Swedish government, with outstanding gardens and breathtaking views. From this lofty height, a chairlift or hike to the island’s summit, <em id="">Monte Solaro</em>, puts you in sight of swoon-worthy views of Capri and the Bay of Naples.</p>

<p id="">If you’ve already seen Capri, another excellent option (perhaps including an overnight in a memorable mountaintop hotel) is a visit to Ravello. Perched atop a dramatically scenic mountain road, this lofty town boasts two of the most spectacular villas in Southern Italy, Villas <em id="">Rufulo </em>and <em id="">Cimbrone</em>, each well worth a visit. Or, for the outdoor enthusiasts, Ravell0 puts you close to one of the most renowned and sublime hikes in the region: The Path of the Gods. From here, you’ll encounter literally intoxicating views of the cliffs up above and the Island of the Sirens, who so mesmerized Odysseus. Surely, they’ll enchant you as well.</p>

<p id="">In summary, <strong id="">Day One</strong>, arrive in Sorrento and chill. <strong id="">Day Two</strong>, tour the Amalfi Coast with a driver/guide, visiting coastal towns including Positano, Amalfi and perhaps Ravello. <strong id="">Day Three</strong>, morning at Pompeii, then maybe a pizza-making class in Sorrento. <strong id="">Day Four</strong>, a ferry trip to Capri or visit the delightful town of <em id="">Vietri Sul Mare</em>, adorned with colorful reliefs and mosaics honoring the town’s expertise in ceramics.</p>

I never tire of any of them, each one working its magic on me as if experiencing them for the very first time. I urge you to add them to your next trip to Central Italy.</p>

<h3>1. Pietrasanta</h3>

<p><strong>Where: </strong><em><br />
Tuscany region (1 hour drive from Pisa or 1½ hour drive from Florence)</em></p>
<p>Years ago while I was scouting the country for possible new tours, I came upon the <strong>ancient Italian town of <em>Pietrasanta</em></strong> in the northwestern corner of Tuscany. My love affair with this town was immediate.</p>
<p>I vividly remember entering Pietrasanta on a late afternoon through the medieval gate of <strong>Porta a Pisa</strong> and arriving in the large main square, <strong>Piazza del Duomo</strong>. I sat down at one of the cheerful outdoor cafes and was mesmerized by the contrast between the beautiful rectangular shape of the square, the facade of the imposing white Duomo and the special installation of <em>modern large sculptures</em>, which are changed on a regular basis.</p>
<p>Pietrasanta is located near the famous white marble quarries of <strong>Carrara</strong> where over 500 years ago Michelangelo came to source marble for his <em>Pietá</em>. Known as <em>“Little Athens”</em> or “City of Artists”, the town&#8217;s <strong>sprawling art studios and galleries</strong> have long attracted famous international artists, including <em>Henry Moore, Isamu Noguchi, Igor Mitoraj, Joan Mirò, Fernando Botero</em> and <em>Damien Hirst</em>.</p>

<h3>2. Ravenna</h3>

&#x200d;</strong><em>Emilia Romagna region (1 hour by car or train from Bologna)</em></p>
<p>If you have never visited <strong>Ravenna</strong>, you have missed an amazing life experience. An extraordinary delight, Ravenna is an <strong>art and history lover’s dream featuring splendid 5th and 6th century mosaics</strong> pretty much everywhere you look.</p>
<p>Ravenna was once the <strong>capital of the Western Roman Empire</strong>, later the capital of the Kingdom of the Ostrogoths and then one of the privileged provinces to the Byzantine Empire. Its buildings preserve the superb mosaic works and mark the city&#8217;s glorious past. Eight of the mosaics are inscribed on the <strong>UNESCO World Heritage list</strong>.</p>
<p>Not to be missed is a visit to the <strong>Basilica of Sant’ Appolinare Nuovo</strong>, the <strong>Basilica of San Vitale</strong> and the Mausoleum of Galla Placidia. The Mausoleum is my absolute favorite. From the outside it seems to be an unassuming small brick building but once inside…. what an incredible surprise&#8230;as I find it to have the most impressive and beautiful mosaics in Ravenna! A piece of trivia: <em>Cole Porter</em> visited Ravenna in the late 1920s and was so inspired by the <strong>Night Sky Mosaic</strong> in the Mausoleum with its <strong>900 glittering stars</strong>, that he wrote his famous song <em>Night and Day</em>.</p>

<h3>3. Urbino</h3>

<p><strong>Where:<br />
&#x200d;</strong><em>Marche region (3½ hour by car from Rome or 2 hours by car from Bologna)</em></p>
<p>The <strong>UNESCO World Heritage Site of <em>Urbino</em></strong> is an evocative and perfectly preserved <strong>hilltop walled city</strong> in the Marche region and <strong>one of the most important Renaissance sites in Italy</strong>.</p>
<p>My personal love for Urbino is <strong>deeply rooted</strong> in my family&#8230;located less than an hour from Pesaro, which is my father’s hometown and the place where we spend our summers on the <strong>Adriatic Coast</strong>.</p>
<p>I visit Urbino at least once every summer, usually on a cool and cloudy a day when I might otherwise be on the beach. The drive towards Urbino from the Adriatic Sea through the gentle countryside is <strong>absolutely divine</strong> and always fills me with emotion when at the last turn, as if by magic, Urbino appears before my eyes.</p>
<p>When in Urbino I always like to revisit the <strong>National Gallery of Le Marche in Palazzo Ducale</strong> (Ducal Palace) a definite must see as it is one of the most impressive examples of Italian Renaissance architecture. It is also home to very important Renaissance masterpieces such as famous paintings by Raphael and many more. My favorite painting in the gallery is the <strong>“Ideal City”</strong> attributed to Piero della Francesca.</p>
<p>The small town of Urbino is not only the hometown of Raphael, the famous Italian artist and architect, it is also a lively town with one of the oldest universities in Italy. Taking the time to wander through the narrow and <strong>charming alleyways and porticos</strong> will make you feel as if you are in a <strong>medieval fairy tale</strong>.</p>
<p>Definitely stop at any of the many cafes or trattorias and enjoy the traditional <strong><em>“crescia”</em></strong>, a flaky flatbread filled with many options: wild greens, grilled vegetables, local prosciutto or salami, sausages and cheese. My favorite filling is <em>stracchino</em> (a soft fresh cheese), arugula and tomatoes.</p>

<h3>4. Pienza</h3>

<p><strong>Where:<br />
&#x200d;</strong><em>Tuscany region (2½ hours by car from Rome / 1½ hours by car from Florence / 1 hour by car from Siena)</em></p>
<p>To tell the truth I am not sure I can explain what makes the tiny town of <strong><em>Pienza</em></strong> so delightful. I do know that just getting there is pure bliss!</p>
<p>The drive through the <strong>Orcia River Valley</strong>, one of the most <strong>beautiful and magical</strong> areas of Southern Tuscany&#8230;with its winding hills and roads lined by cypress trees, vineyards, olive groves and in summer golden fields of wheat and sunflowers&#8230;always sets the stage for a glorious arrival in Pienza.</p>
<p>The town of about 2,000 inhabitants is known as the <strong>“Ideal Renaissance City”</strong> and has earned <strong>UNESCO World Heritage</strong> status for its 15th century historic center, urban design and architecture. For most however, myself included, what makes Pienza stand out is its position high atop the most beautiful view of the <strong>Tuscan countryside</strong>.</p>
<p>I find Pienza to be a great town for strolling or as we say in Italian, <strong><em>passeggiare</em></strong>. I love strolling through its beautiful soft-colored historical center and getting lost in the countless c<strong>harming ivy-draped side streets</strong> with their colorful potted flowers framing the doorways&#8230;or walking through the many <strong>enchanting squares</strong> with people chatting over coffee or lunch at the cafes and restaurants.</p>
<p>Every time I&#8217;m in Pienza I have a ritual of finding the three small, super charming streets that legend says brings romance and good luck: <strong>Via del Bacio</strong> (kiss street), the famous <strong>Via dell’ Amore</strong> (love street) and <strong>Via della Fortuna</strong> (good luck street). I would recommend that you at least find Via del Bacio, because of its wonderful <strong>panoramic views</strong> over the Val d&#8217;Orcia, and definitely the ideal place to take a great photo.</p>
<p>Many tourists often skip Pienza for the better known towns of Montepulciano and Montalcino, but please trust me, if in the area, don’t miss this perfect place!</p>

<h3>5. Civita Di Bagnoregio</h3>

<p><strong>Where:</strong><br />
&#x200d;<em>Lazio region (1½ hour by car from Rome, 30 minutes by car from Orvieto)</em></p>
<p><strong>The surreal 2,500 year-old Etruscan origin village of Civita di Bagnoregio,</strong> <strong>a UNESCO protected site,</strong> is a place <strong>suspended in time and space.</strong> It is located on the border between the regions of Lazio (Rome is the capital of this region) and Umbria.</p>
<p>Civita di Bagnoregio is one of the most beautiful and intriguing villages in Italy known also as <strong>“the dying city”</strong> <em>(la citta’ che muore)</em>. <strong>It is perched on top of a canyon of crumbling volcanic tuff,</strong> rising above the Tiber river valley and in constant danger of destruction due to erosion.</p>
<p>It is an adventure getting to Civita as it is <strong>accessible only by a 300 meter (approx. 1,000 feet) pedestrian suspension bridge,</strong> but it&#8217;s a walk you will never forget! A truly unique setting like nowhere else in the world. The village, hosts a population of 100 in the summer and about 12 during the winter.</p>
<p>I vividly remember seeing Civita for the first time as a child from the panorama terrace across the valley and in the distance the town seemed <strong>floating in mid-air</strong> and to my young eyes it looked <strong>eerie and enchanting</strong> at the same time. I almost felt as though it was a dream until years later as a young adult I went back and totally fell under Civita&#8217;s spell.</p>
<p>You enter Civita di Bagnoregio through the <strong>gate of Porta San Maria</strong> which leads you through a cluster of pretty houses, decorated with hammered iron balconies, creeping ivy and overflowing flower boxes to the main square with its beautiful <strong>Romanesque church of San Donato</strong>.</p>
<p>I suggest wandering around the village, admiring the <strong>wonderful architecture</strong> spanning several hundred years of various styles with some surprisingly <strong>elegant renaissance <em>palazzi</em> </strong>and soaking in the unforgettable atmosphere. Also enjoy the small and excellent trattorias and cafes and the local artisans&#8217; shops.</p>

<p id="">In our last newsletter, we introduced <em id="">La Città de la Cultura</em>, Italy’s annual citation of <strong id="">a city that epitomizes Italian character, culture, and community</strong>. For 2023, two cities in the northern province of Lombardy shared this honor, Brescia, and Bergamo. Last week, we introduced the first of these cities, Brescia.</p>
<p id=""><strong id="">This week we highlight what makes Bergamo an official “capital of Italian culture”.</strong></p>
<p id="">Known as <em id="">Bergomum</em> by the Ligurian tribe that settled it during the Iron Age, Bergamo had evolved by 49 BCE into a Roman municipality that served as a lively hub along a major military axis.</p>
<p id="">Today, the city continues to be among the busiest in the nation, bustling with commercial enterprises and tourists.</p>

<h3 id="">A CITY OF HIGHS AND LOWS</h3>
<p id=""><strong id="">Located about 25 miles northeast of Milan, Bergamo’s</strong> physical layout is a study in dramatic contrasts, with the city (and, also the province) divided into an Upper (<em id="">Città alta</em>) and a Lower section (<em id="">Città bassa</em>).</p>

<p id="">Built upon the site of a former Roman forum, the <em id="">Città alta</em> can be reached by a funicular, which itself, is an “uplifting” experience. On arrival, see the <em id="">Piazza Vecchia</em>, the <em id="">Palazzo della Ragione</em> still bearing a signature Venetian lion, and an octagonal Baptistry dating from 1340, among the many architectural and historical sights.</p>
<p id=""><strong id="">Encircling the Upper City is a four-mile circuit of imposing 16</strong><sup id="">th</sup><strong id=""> century stone walls</strong> (<em id="">le mura</em>) built by the Venetians atop ancient Roman walls, now a UNESCO World Heritage Site. Originally a robust defense system guarding the city during Venice’s occupation of Bergamo, they now provide a spectacular vantage point for exceptional views of the more modern lower city, and the countryside fanning out below it. To stroll the walls at sunset…<em id="">magnifico</em>!</p>

<p id=""><strong id="">Bergamo’s geography </strong>also presents a bold contrast between the soaring hillsides of <em id="">Le Valli</em>, where the Orobie Alps and Bergamo’s pre-Alps offer breathtaking vistas, and views of the rolling fields of the plain below, known for the plentiful production of polenta, among other staples of Italian cuisine.</p>
<p id=""><strong id="">To hear the region’s largest bell tower, <em id="">Il Campanone</em></strong>, chime 100 times each evening at 10, evoking the nightly locking of Bergamo’s gates throughout the Venetian occupation is to feel the presence of history, vividly alive at every turn.</p>

You’ve discovered that Bergamo is the birthplace of revered composer <strong id="">Gaetano Donizetti</strong>, creator of the beloved operas <em id="">Lucia di Lammamoor</em>, <em id="">Don Pasquale</em>, <em id="">L’elisir d’amore</em> (and 67 others). Perhaps you toured the early, still-active industrial village, or “company town” of <strong id=""><em id="">Crespi D’Adda</em>, Bergamo’s second UNESCO World Heritage Site. </strong></p>
<p id=""><strong id="">Now, it’s time to eat.</strong>  Do not overlook the hearty pleasures of <em id="">polenta taragna</em>, a homey dish pairing a special polenta with local cheese made in the nearby mountains. Taste the fanciful Donizetti cake, created in the composer’s honor. But whatever else you try, <strong id="">don’t forget the gelato</strong>.</p>
<p id=""><strong id="">Yes, Bergamo is well worth a stop on any visit to Northern Italy.</strong> But for the most delicious visit possible, please bear in mind that<em id=""> stracciatella</em>, one of the most popular flavors of gelato ever, was invented in Bergamo in 1962. Its satisfying pairing of vanilla ice cream with crisp shredded chocolate offers one of the most delicious contrasts of all, in this city of memorable contrasts.</p>

<p id=""><strong id="">Annalisa </strong>is a chef and culinary entrepreneur. Inspired by the influence of her grandmothers in the Sicilian countryside of Favara, she has turned a longtime passion into a fascinating life.</p>
<p id="">With a farm-to-table ethos steeped in the Mediterranean diet, Annalisa interweaves cooking, storytelling and even language learning, in environments ranging from private homes to contemporary art exhibition spaces. Her unique cooking classes include a series called <em id="">Bimbi Chef</em>, for children, and one that features a pistachio-filled, marzipan Easter lamb made from a recipe handed down by local nuns.</p>
<p id="">Beyond her own kitchen, her internet classes and a busy schedule as a guest chef and instructor throughout Europe, Annalisa has become an ambassador for local Sicilian food producers and their products through a collaboration with the <a id="" href="https://www.coopculture.it/en/events/event/diodoros-project/" target="_blank" rel="noopener"><strong id="">Diodoros project</strong></a>. This vital organization supports bio-diverse preservation farming in the Valley of the Greek Temples in <em id="">Agrigento</em>, a UNESCO world heritage site also renowned for its almonds, olives, and protected black bees.</p>
<p id="">In 2021, Annalisa’s talent and creativity earned her the title, “Sicily’s Best Female Entrepreneur of the Year”. To cook with her is to go back to the classics, and forward to a sustainable future.</p>

<p id=""><strong id="">Marcella</strong>, Master Chef, was born on Isola del Giglio, a small island of the Tuscan Archipelago and founded her school in 2009. She has over 30 years of experience in every aspect of Tuscan and authentic Italian cuisine and brings her positive energy and passion to teaching students of every age and at every level, from the home chef to the professional in training.</p>
<p id="">Marcella’s teaching celebrates the traditions and principles of classic Italian cuisine, using only fresh, locally sourced fish, meat, vegetables, and other local ingredients. Her school offers a wide range of classes, taught in two languages in a bright professional kitchen along the Arno, ranging from private or single-family lessons, where you choose the menu, to a small scale “open class”, where the whole group participates.</p>
<p id="">Private, hands-on lessons in Italian or English are three-hours long and end at the table, of course, enjoying the meal you’ve just prepared.</p>
<p id="">Small or large group, homemade pasta or your favorite Italian pastry, Marcella’s philosophy is to make every student feel comfortable and capable in the kitchen. In her classes, as she puts it, “Cooking is not competition, but is taught as what it really is, everything else—chemistry, nutrition, culture, history, health, sharing, beauty, necessity.”</p>

<p id="">In Roman times, the area across the Tiber River from the city’s center was called Trans Tiberim, or “beyond the Tiber”. Today, it’s called Trastevere, and it’s the Soho of Rome–where for the past twelve years, <strong id="">Paola’s </strong>cooking school has flourished. Her kitchen and dining room windows overlook the piazza and the famed <em id="">Basilica of Santa Maria in Trastevere</em>, one of the oldest churches in Rome.</p>

<p id=""><strong id="">GC: What do you love most about Sicily?</strong></p>
<p id=""><strong id="">RR: </strong>We have four seasons here, each with wonderful food. We tend to be very seasonal with our food. In most parts of the world, that’s not possible, you have to eat what comes from elsewhere. And, I don’t shovel snow!</p>
<p id="">I am still moved by the sights: the sun hitting the temples, the color of the stones… There are days when the sky is an intense blue, I can’t even explain it. And then in front of it, the cathedral with the white stone. It’s…Wow.</p>
<p id="">Sicily is a land where history and the present live together. Take the city of Siracusa, on the island of Ortigia. You have the Temple of Artemisia, and next to it is an electric car park! We can’t forget the past here, because we live on it, with it, around it.</p>

<p id=""><strong id="">GC: What are some other highlights for new travelers to Sicily?</strong></p>
<p id=""><strong id="">RR: </strong>The volcano, Mt. Etna. We have an active volcano here—we refer to her as a she. Greeks named her the mother of mountains. I think that is exciting for everybody.</p>
<p id=""><strong id="">GC: I have heard people refer to Mt. Etna as “Mamma Etna”.</strong></p>

<p id=""><strong id="">RR:</strong> Yes, because she gives us everything. She is always present. You can see her from all around the island.Every section of the volcano grows something specific, and every season brings something for us.</p>
<p id="">Palermo deserves to be seen too—the Valley of the Temples. It’s stunning. Five temples in a row. We have as many temples here as in Athens. People say, where are we?</p>
<p id=""><strong id="">GC: Sicily has a fascinating mix of cultures. The Arabic influences, the Normans, the Spanish… can you still sense these influences?</strong></p>
<p id=""><strong id="">RR: </strong>Yes. Every side of the island is different, depending on who dominated it. It’s still vivid and still in our DNA. For example, the dialect spoken in the home on the western side is basically Arabic. Our cuisine is very influenced by past civilizations, and today, even though Palermo, on the west side of the island is very modern, it’s typical to make <em id="">cous cous</em> instead of spaghetti. On the eastern side of the island, we don’t know how to make <em id="">cous cous</em>, we go to the Western side for that. We’re all different, the island is not that big, but it’s also not that small.</p>
<p id=""><strong id="">GC: </strong>It’s true. Our <a id="" href="https://www.discovermyitaly.com/small-group-tours/sicily-4-18-to-4-28-2024" target="_blank" rel="noopener">Discover my Italy Sicily tour</a> is nine nights, and we don’t see it all! People think that because Sicily is an island, they can see it all in 3 days. Maybe if you have a free day on a tour, you could pick one city and go there. But you can’t see the entire island. I say that to give a sense of how big the island is, and how much there is to see.</p>

<p id=""><strong id="">GC:</strong> <strong id="">What are your favorite places to eat?</strong></p>
<p id=""><strong id="">RR:</strong> We have beautiful outdoor markets: <em id="">Il Capo</em> in Palermo and in Catania, the oldest of them all. In Catania, there are restaurants in the market. You just point to the fish you want and say, I want that! And they’ll cook it for you.</p>
<p id="">In Palermo, the Arabs built hundreds of tuna factories. Through them we learn the proper way of fishing swordfish and tuna. It’s all in the catch. If you do it wrong, no matter how you cook it, it’ll be hard and dry. Where those factories were, today they are restaurants and they’re fantastic.</p>

<p id=""><strong id="">GC: What are Sicily’s signature dishes or delicacies?</strong></p>
<p id=""><strong id="">RR:</strong> Wherever you go, you’ll find <em id="">caponata</em>, which the French copied and called “ratatouille”. There are over 150 recipes (the authentic one is topped off with pure bitter chocolate).</p>
<p id="">In Roman times, one of the most important ingredients for preserving food was salt. But the Arabs used, honey, also. Because honey does not spoil, they used it to preserve fish, vegetables, and meat. Then they cut it with vinegar, so that’s the origin of sweet and sour; it comes from the Arabs.</p>
<p id=""><em id="">Arancini</em>, the famous rice balls, are everywhere. The Arabs brought rice to Sicily, so that’s why we have arancini. It’s a very ancient recipe.</p>
<p id=""><strong id="">GC: I thought you might mention a certain pastry?</strong></p>

<p id=""><strong id="">RR:</strong> <em id="">Cannolo</em> originates in Palermo. They’re the kings. A real cannolo must be made from <em id="">ricotta</em> cheese from sheep. If you want a full-fledged Sicilian <em id="">cannolo</em> that’s how it works.<strong id="">GC: What are some outstanding Sicilian wines?  RR: </strong><em id="">Nero D’Avola</em> is the indigenous grape of the island. The Greeks found it and planted it on Mt. Etna. It exploded! Nero D’Avola means black grapes from the city of Avola. It’s at sea level, very hot. So, the plants cover the grapes with their leaves! We also have Cabernet Sauvignon now, that we’ve brought up on the volcano. The wines are phenomenal.<br />
<strong id="">&#x200d;</strong></p>
<p id=""><strong id="">GC: What white wine should travelers try?</strong><br />
<strong id="">&#x200d;</strong></p>
<p id=""><strong id="">RR:</strong> <em id="">Grillo</em>. The good Grillo comes from the Northwestern side of the island.<strong id="">GC: After sightseeing, eating, and drinking, what else is there to do?</strong><br />
<strong id="">&#x200d;</strong></p>
<p id=""><strong id="">RR: </strong>The hiking trails on the volcano are spectacular. And in winter, you can ski there. You can start at the top where it’s cold, make your way down and go swimming. In Palermo is the Teatro Massimo, one of the top five opera houses in Italy. Also, you can see the Greek tragedies in the original theaters. That is amazing. And of course, you can hear jazz and contemporary music in Palermo.</p>

<p id="">I would go to Segesta, see the view from the ancient Theatre, see the Greek Temples, and then to the Salt Pans. They’re pink, with flamingos walking around in it. And I would eat an Arabic dish, I would eat <em id="">cous cous</em>.</p>

<p id="">A serenely beautiful and spiritual enclave in the heart of busy Bologna, this graceful complex of buildings is said to date back to the 5<sup id="">th</sup> century. Originally, it housed a temple dedicated to the goddess Isis. Today, as a functioning religious institution, its seven structures present a veritable compendium of Bolognese architectural history, illustrating styles from Romanesque to Gothic. In addition to the contemplative peace of the compound, you’ll discover a trove of artifacts, religious art, and an archeological exhibit featuring the ruins of several ancient structures, including the original temple of Isis.</p>

<p id=""><strong id=""><em id="">L’Archiginnasio</em> – art, science, and astounding architecture </strong></p>
<p id="">In its first incarnation, this impressive building was commissioned by Cardinal Borromeo to house the University of Bologna. Built in 1562 -1563 by architect Antonio Morandi, a.k.a., “Il Terribilia”, in 1838, it was repurposed as the city’s Municipal Library, then in 1944, survived a massive bombing. With its sweeping staircases, grand dual lecture halls, (one for Artists, one for Legislators), and a rhythmically geometric courtyard, it would be dramatic enough. But, tucked away inside is an Anatomical Theatre built in 1637; and in that theatre are a pair of carved wooden figures by Ercole Lelli, with their skin peeled off to reveal their musculature. And yet somehow, they only augment the power of this unforgettable edifice.</p>
